As far as I can see, use of the SPACE key (largest key on the keyboard) to start and stop playback is pretty much industry standard. There are exceptions, but those are usually "extreme"...

The Escape key simply de-selects whatever your currently selected section is.

Notation Composer has no provision for globally changing and saving the overall volume of a piece. As Herbert noted, the Volume slider is only a temporary "wood-shedding" tool.

Check the Volume level of the track in question. It could be that there's a Midi CC volume change in it that lowers the volume and that it's not being restored at the beginning of the piece...
